If I change my bank details, what happens to orders already waiting to be paid?

Nothing changes for them. The account details, the amount and the payment reference are copied onto each order at the moment it is created, and every later screen and email reads that copy rather than your current settings. Orders already waiting keep showing exactly what their customer was originally told, while new orders use the updated details.
